VAL'S OPEN-FACE CHICKEN PIE WITH BISCUIT TOPPING Recipe; Ocean Park-WA


Holland had cooked a whole chicken the other day in the Insta Pot - basically for broth; so, tonight I used the leftover meat in this simple casserole meal I pulled together, using ingredients on hand 😊

It was a hit  👏 … and a definite repeat 👍

VAL'S OPEN-FACE CHICKEN PIE WITH BISCUIT TOPPING – 6 servings

##NOTE: This recipe will move along smoothly if you prepare the ingredients before you start cooking the sauce.

Leave biscuits in the 'fridge until you need to place them on the chicken-veg blend.

Canned Biscuits * 2 TBSP Butter or margarine * 2 TBSP Flour * 1/2 tsp. Salt Substitute * 1/2 tsp. Garlic Salt * 1/8 tsp. ground Szechuan Pepper * 1/8 tsp. grnd. Black Pepper * 1/8 tsp. Thyme leaves * 1 c Chicken Broth * 1/2 c Water * 2 TBSP Powdered Milk * 1/2 c Cheddar Cheese, grated * 2 c cooked, cubed Chicken meat * 1 c Peas * 1 c Carrots, diced * 1 Onion, diced * 1 large Potato, diced * 1/2 c Celery, sliced * 1 c mushrooms, sliced * Medium Soup Pot * Lrg. Pyrex Casserole Dish, oblong * Cooking Spray

Biscuits - I prefer my homemade biscuits, but my husband likes these canned ones; so, that's what I used; spices, flour, & butter.
Something new & interesting in the store - so, it came home with us, & we will sample it tonight.

1) Heat oven to 425-degrees.

2) In soup pot, blend the chicken broth, water, powdered milk, flour, seasonings, & butter; cook over low heat, stirring until mixture is smooth and bubbly.

Sauce …

3) Remove from heat. Stir in cheese – blend well: gently, but thoroughly, stir in the chicken meat and vegetables.

Sliced carrot 'coins'.
Veggies & cubed chicken meat.
Spaghetti string grated Cheddar cheese; it melts easier this way.

4) Spray bottom of casserole dish with cooking spray, & pour mixture into the pie pan; spreading evenly for even baking.

5) Bake 35 minutes - then remove from oven and place biscuits evenly spaced across filling: return to oven and lower oven temperature to 350-degrees (or whatever the biscuit directions instruct on package), and bake another 10 minutes more, or until nicely browned.

6) Remove from oven & serve. YUM!
