I like stew when the weather is cold and wet - today was Stew Day.
Holland had to make a run into Longview this morning, to get Betsy's transmission maintenance & oil change done, so I simmered this stew in my crockpot from the time he left, until he returned: the house smelled wonderful, and my husband liked it so well - there are no left-overs.
VAL'S BEEF STEW ~makes 5 or 6 servings
1 pound Beef cubes * 1½ Tbsp. Olive Oil * 2 cups Water * ½ teaspoon Salt * 1/8 teaspoon ground Black Pepper * 2 large Potatoes, cut into 1½ -inch pieces (about ½ cup) * 2 medium carrots, cut into 1-inch pieces (about 1 cup) * 1 medium Green Bell Pepper, cut into 1-inch pieces (about 1 cup) * 1 medium stalk Celery, cut into 1-inch pieces (about ½ cup) * 1 Yellow Onion, chopped * 2 large cloves Garlic, pressed * 1 cup Peas * 1 Bay Leaf * 1 pkt. Lowry's Beef Stew Seasoning mix * 2 TBSP Flour * 1 cup Water
1) Place meat, veggies (except peas), & seasonings, into the crock.
2) Blend Lowry's dry seasoning mix, flour, & 1 cup water; then add to meat & veggie combo.
3) Set crockpot temperature gauge to High setting until stew boils … then reduce heat to Low and cook 5 hours.
4) Add Peas & cook an additional hour.
