SURFSIDE-WA

Holland wanted to go watch the waves and spend some time on the beach before the rains came to keep us indoors until Tuesday 😟 We went to the furthest beach access we could, before land met Ocean - we hadn't been there in a while:

After about an hour of enjoying the fresh air, watching the waves roll in, and watching people meander all over the beach … Holland suggested we go for a little drive before we head home.

I'm always game for a drive 😊👌

To start, we backtracked through Oysterville; and I saw that little white bridge that always catches my attention - I asked if we could get closer. Holland said, "We'll drive over it"; so, that's what we did.

According to the map shown in the Blog link … the canal ran all the way from Ilwaco, to what is now the Surfside Community. When I mentioned what I had learned, Holland said the canal was probably used to bring small boats in and out of the area, back in the peninsula heydays.

We didn't leave Ocean Park while we drove around: we explored. Just to see what we could see that we hadn't already seen 😉

And again, Holland was asked, "Can we drive around the block here, so I can get a good picture of that Ten Commandments wall mural?"

When we finally got back home, Holland started Supper … and enjoyed a lengthy phone convo with his Colorado cousin, who called just as the pot was set to cook. They made plans to meet up around Thanksgiving time - our lungs can't handle the Colorado elevation, but we can definitely make time for them to get together when he makes a visit to the CA lowlands 👍

HOLLAND'S PORK & BEANS Recipe; Ocean Park-WA

Rain is forecast through the weekend - and gale force winds 😳 are expected too; so, today was the perfect Day for my husband to put on a pot of his tasty pork & beans 😊👌

I have actually been hungering for this tasty delight, so I'm glad I'll be enjoying it tonight, when the chill blows in, the the crazy winds kick up - we aren't riding the waves, but the ocean is literally only a 5 minutes drive from our front steps; so, we'll feel the rocking and rolling tonight, when Independence is pelted with raindrops & pushed against by mother nature's huffiness.

This recipe is so simple, it's deceptive in the way it flirts with your taste buds 😂🤣

Holland's Pork & Beans ~serves 8

Ingredients.

1-lb. bag Pinto Beans, rinsed * 1-lb. Pork Belly, sliced * 1 lrg. Yellow Onion, sliced * 1 head Garlic, separated & peeled * 8 c. Water * 1 TBSP Lowry's Garlic Salt * 1 TBSP Pink Himalayan Salt * 1 TBSP. Paprika powder * 1/2 TBSP Black Pepper, ground * 1 Insta-pot Pressure Cooker * 1 Ladle

1) Rinse beans - place in cooker pot; add onion, garlic, water, and spices.

Rinse beans & place in pressure cooker pot.

2) Place lid on pot, secure tightly & set timer. Pressure cook 2-1/2 hours.

3) Carefully vent, remove lid, and serve.

This is SO YUMMY 😁👍
