PLANS CHANGED~Self-Care; Castle Rock-WA

I heard my watch alarm go off - and I ignored it for another hour's worth of zzz's: my eyes were burning & tearing with an allergic reaction to the outside atmosphere. Even inside, you cannot fully escape it. It literally hurt to open my eyes, so I prolonged it as long as I could, knowing that even with sleeping in, I'd still be able to make my noon gathering of friends … outside atmosphere permitting. When it went off for the 6th time, Holland came upstairs and wiggled my feet to shake me fully awake, & said, "You might want to rethink leaving the house, today: it looks pretty bad out there."

128 = This means that while the air may not be immediately dangerous for the average healthy person, it can still cause health effects in certain vulnerable populations. Holland & I fall into the [vulnerable] sector of society: asthma (me) & COPD (him).

Sure enough … when I moved downstairs in sloth mode, I saw that the smoky atmosphere would not be healthy to be out in. So, I made myself some coffee, watched traffic, and missed the friends I planned on spending time with, this afternoon.

Plans changed.

Risky air quality & rising temperatures; humidity 62 percent. Cautions for sensitive health situations. Limit outdoor activity and keep windows closed if you struggle with asthma, bronchitis, or other respiratory conditions. People with heart issues should monitor their symptoms and avoid strenuous exercise outdoors.

Rinsing my coffee mug, I got to thinking that I could still stretch my muscles in a relaxed way - instead of working with weights, or pushing the envelope with cardio activity … I could engage in hand acupressure, and feet stretches; these light exercises as just as important as the other:

Hands and feet tended to, I poured another cup of coffee & opened my latest Read, to pick up where I let off last night before the sandman made his appearance. Today's continuing adventure with the Fargo's, takes me to Sawara, Japan: pronounced as SAH' WAH RAH' (a's are soft).

Despite the atmospheric hobbling and the politically motivated "climate change!" hysteria, generated by wildfires which are the direct result of the lawlessness foisted on us by the shamelessly pandering socialist demonrats now morphing into full-on communists - bent on leaving nothing in their wake but scorched earth … it's been a pretty okay kind of Day, here, in our small corner of the world.

We've been somewhat tethered the past couple of days, by the smoky condition outside; but, Holland says the weatherman is promising brighter, cleaner, days ahead.

Val's Chicken-Rice-Bell Pepper Casserole

This tasty, colorful, comfort-food chicken and rice casserole 🍗🥘 was a hit with my husband 😁👍

It's a satisfying meal, made with simple ingredients - and it is easy to make 👩‍🍳

I served this casserole with sides of peas, & biscuits.

Val's Chicken-Rice-Bell Pepper Casserole ~serves 3

1 c. chicken, cubed * 1 c. cooked rice * 1/3  cup Cheddar Cheese, shredded * 1/3 c. Mozzarella Cheese, shredded * 1/2 c. Chicken broth * 1/4 c. Yogurt, plain * 1/2 TBSP Olive Oil * 1 sm. White Onion, chopped * 1/3 Red Bell pepper, diced * 1/3 Yellow Bell pepper, diced * 1/3 Green Bell pepper, diced * 1/4 tsp. Garlic Powder + 1 Garlic clove, pressed * 1/2 tsp. Paprika * 1/2 tsp. Himalayan Pink Salt * 1/8 tsp. Black Pepper, grnd. * Opt: chopped parsley or green onions for garnish (I blend my garnish with the cheese blend)

1 medium-size Skillet * 1 Cutting Board * 1 Lrg. Kitchen Knife * 1 Upright Vegetable Shredder * 1 hand-held Spaghetti Cheese Grater * Casserole Baking Dish * 1 Lrg. Cooking Spoon, slotted * 1 Lrg. Serving Spoon * 1 Pyrex Measuring Cup * Measuring Cups & Spoons * Hotpad's * Supper Plates & Silverware

1) Preheat your oven to 375°F. Lightly grease a glass or ceramic baking dish and set it aside.

2) In a skillet over medium heat, warm the olive oil or butter. Add the chicken bits, and sauté until no longer pink - about 10 minutes, stir to keep from over-browning.

3) Add the sliced onion, diced bell peppers, & pressed garlic, to the skillet and cook for another 5 minutes; until veggies begin to soften - but still keep some texture.

4) In casserole dish, combine the cooked chicken, cooked veggies, rice, and spices: gently stir thoroughly to evenly distribute all ingredients.

Place chicken & veggies in casserole dish.
Add cooked rice.
Gently stir & sprinkle with spices.

5) In Pyrex cup, blend the chicken broth and yogurt; pour over the mixture and mix until everything is well combined.

6) Blend the shredded cheese & parsley; spread evenly over the casserole.

7) Bake uncovered for 30-35 minutes, or until the casserole is heated through and the cheese on top is melted, bubbly, and lightly golden (oven cook differently, so be sure to check periodically & adjust cooking time by 5 more min's, if necessary).

8) Remove from the oven and let it rest for 5 minutes before serving.

NOTE: Because my oven is so small … I baked my biscuits before baking the casserole & rewarmed them in the microwave, for about 1 minute before serving. I cooked the peas on low heat while the casserole baked.
