Val's Chicken-Rice-Bell Pepper Casserole

This tasty, colorful, comfort-food chicken and rice casserole 🍗🥘 was a hit with my husband 😁👍

It's a satisfying meal, made with simple ingredients - and it is easy to make 👩‍🍳

I served this casserole with sides of peas, & biscuits.

Val's Chicken-Rice-Bell Pepper Casserole ~serves 3

1 c. chicken, cubed * 1 c. cooked rice * 1/3  cup Cheddar Cheese, shredded * 1/3 c. Mozzarella Cheese, shredded * 1/2 c. Chicken broth * 1/4 c. Yogurt, plain * 1/2 TBSP Olive Oil * 1 sm. White Onion, chopped * 1/3 Red Bell pepper, diced * 1/3 Yellow Bell pepper, diced * 1/3 Green Bell pepper, diced * 1/4 tsp. Garlic Powder + 1 Garlic clove, pressed * 1/2 tsp. Paprika * 1/2 tsp. Himalayan Pink Salt * 1/8 tsp. Black Pepper, grnd. * Opt: chopped parsley or green onions for garnish (I blend my garnish with the cheese blend)

1 medium-size Skillet * 1 Cutting Board * 1 Lrg. Kitchen Knife * 1 Upright Vegetable Shredder * 1 hand-held Spaghetti Cheese Grater * Casserole Baking Dish * 1 Lrg. Cooking Spoon, slotted * 1 Lrg. Serving Spoon * 1 Pyrex Measuring Cup * Measuring Cups & Spoons * Hotpad's * Supper Plates & Silverware

1) Preheat your oven to 375°F. Lightly grease a glass or ceramic baking dish and set it aside.

2) In a skillet over medium heat, warm the olive oil or butter. Add the chicken bits, and sauté until no longer pink - about 10 minutes, stir to keep from over-browning.

3) Add the sliced onion, diced bell peppers, & pressed garlic, to the skillet and cook for another 5 minutes; until veggies begin to soften - but still keep some texture.

4) In casserole dish, combine the cooked chicken, cooked veggies, rice, and spices: gently stir thoroughly to evenly distribute all ingredients.

Place chicken & veggies in casserole dish.
Add cooked rice.
Gently stir & sprinkle with spices.

5) In Pyrex cup, blend the chicken broth and yogurt; pour over the mixture and mix until everything is well combined.

6) Blend the shredded cheese & parsley; spread evenly over the casserole.

7) Bake uncovered for 30-35 minutes, or until the casserole is heated through and the cheese on top is melted, bubbly, and lightly golden (oven cook differently, so be sure to check periodically & adjust cooking time by 5 more min's, if necessary).

8) Remove from the oven and let it rest for 5 minutes before serving.

Casserole with sides.

NOTE: Because my oven is so small … I baked my biscuits before baking the casserole & rewarmed them in the microwave, for about 1 minute before serving. I cooked the peas on low heat while the casserole baked.
