We weren't leaving the house, today - so, I pulled a crockpot soup together for supper ⏲️🥣; just whatever sounded good to go with the broth I have saved from Holland's Beef Instapot Supper, last week 🥩🥔🧄
I thawed out the beef broth & added to it - some blended bean mix, some veggies 🥕🍅, a touch of spicy seasoning 🍃, and 2 eggs = no recipe to read from 👩🍳 ... just grabbing 😉 and using 😊
MOR Val's Bean & Cabbage Soup
4 c. Beef Broth * 1 c. Water * 1 c. Bean Blend, dry - sorted & washed * Garlic, 1 head - peeled * 1 lrg. White Onion, sliced * 3 sm. Celery stalks, sliced * 3 sm. Carrots, sliced * 1 Tomato, cubed * 1/4 head of Cabbage, sliced
8-qt. Slowcooker * 1 Cutting Board * 1 sm. mesh Colander Strainer * 1 lrg. Kitchen Knife * Measuring Cups & Spoons * 1 lrg. Pyrex Measuring Cup * 1 lrg Slotted Cooking Spoon * Soup Bowls & Silverware
1) Place broth in crock - set temperature and start that thawing.
2) Measure, sort & wash beans; set aside.
3) Prepare veggies; place in crock & season.
4) Place cabbage on top of mixture & lightly push down to make room for the lid to fit comfortably
Pierce the ends of EA egg & nestle in the cabbage bits:
5) Place lid over crock, set temperature, and enjoy the aroma while soup cooks …
6) When beans are bite-tender, the soup is ready to eat.
