Today begins the 24-hour-weekend 'Island of Rest'; and I wanted to indulge my wifey side … so, I baked this tasty fish dish for Shabbat Supper; and followed it up with my own recipe of yummy Challah Cinnamon Rolls, for desert (follow the link at end of this post).
This recipe does take some time to prepare, but the prep time is worth it: it is delish 👍
##For side dishes, I steamed red baby potatoes & cauliflower (line half the steamer basket with a square of aluminum foil; place potatoes inside and gently fold edge over to top of basket rim, placing edges under basket lip). Place cauliflower florets along remaining basket space: place about 16 ounces of water into the bottom of a steamer pan - bring it to a rolling boil: carefully add steamer basket. The veggies will be fork tender by the time the fish finishes baking.
==Val's Tilapia Milanese ~3 servings
3 6-ounce Tilapia fillets * 1/2 cup Milk * 3/4 cups all-purpose Flour * 1-1/2 cups Texas Toast flavored Croutons, crushed * 3 large eggs * 2 tablespoons extra-virgin olive oil * 1-1/2 TBSP Margarine * Butter flavored Cooking Spray * 8" diameter foil cooking pan
1. Preheat the oven to 425 degrees F.
2. Line a baking sheet with foil; pour 2 tablespoons olive oil into pan, and gently tip to coat entire pan bottom.
3. Soak the fish in a bowl with the milk 15 minutes; set aside.
4. Place the croutons in a quart size Ziploc, and crush with rolling pin; place onto a shallow dish; set aside.
5. Measure the flour onto a shallow dish; set aside.
6. Lightly beat the eggs in another dish; set aside.
7. Remove each fish fillet, 1 at a time, and dip into the milk - then dredge in flour, shaking off the excess. Then, dip in the eggs thoroughly covering the fillet; then gently press fish into the crushed croutons - turning to coat both sides.
8. Place the coated fillet in the lined foil pan.
Repeat with remaining fillets.
9. Dot each fillet with dabs of margarine.
10. Transfer the fish to the oven, and bake until cooked through (about 13 minutes - fillet should 'flake' when pierced with fork tines).
