February 4th, 2025: Today was a 'kick-back & relax' Day: we just took it easy and relaxed our bodies from yesterday's activities of tearing down and setting Independence up again, when we arrived here in Quartzsite-AZ, yesterday afternoon.

I checked FB messages … and quickly backed out before I could get caught in any on-going drama's: I'm really going to be making concentrated efforts to avoid endless looping hamster wheel topics, this year ✌️
And I posted to a Blog Hop - and saw that my crochet pot cover had been showcased there, too 😊
Around 3:30 P.M., I got supper under way.
I decided to make another boxed meal: I'm not sure what this is supposed to be … Holland brought it home the other day; he says Goulash (doesn't look like goulash: my goulash is always paprika red), & I say Stroganoff (but that doesn't seem 'right', either; judging by the pkg. pic) - so, tonight I compromised, and added {extra's} that blend with either 😉
==VAL'S BEEF BASED HH SUPPER Recipe ~3 medium servings
1 boxed Hamburger Helper Supper * 1 pound Ground Beef * 1 large White Onion, sliced * 1 med Shallot, sliced * 2 cloves Garlic, minced * 3 TBS. Margarine * 1/2 Tbsp. Dijon Mustard * 1/2 tsp. Worcestershire Sauce * 1/2 tsp. ground Paprika * 1/2 tsp. dried Thyme Leaves * 1 med Bay Leaf * 14 med Brussels Sprouts, trimmed & stem's X'd * 1 lrg. Skillet w-lid * 1 steamer pot w-lid
1) In a large skillet - combine meat, onion, shallot, and garlic; brown meat, then simmer mixture for half an hour.
##In the meantime, get the steamer pot boiling; and bake the cornbread (I used the Jiffy mix type).
2) Read HH Box thoroughly and following directions, add to skillet … and then add the margarine, mustard, Worcestershire sauce, paprika, thyme, and Bay leaf and heat to boiling: reduce heat and continue cooking according to box directions.
##The steamer pot should be at a rolling boil by now … carefully place the steamer basket in the pot, cover with lid - and steam about 10 minutes; they should be tender, but not mushy.
After supper dishes were done and left to air-dry, I watched a vintage movie … and finished up the kitchen towel set I started a couple days ago in Fortuna-AZ:
I'm not particularly happy with the way it turned out; but it was a new design concept - and it will {do} in my kitchen 👍
