ONE PAN CHICKEN & POTATOES FOR 2 Recipe; Ocean Park-WA

Tonight, we had the chicken supper I had planned for last night ;-)

The kitchen smelled wonderful … supper prep was relatively quick and easy; and it's a repeat meal :-)

The goal is to be 150 lbs. (combined tally) lighter by next summer … and to significantly bring Holland's blood pressure down - so, I'll be cooking most of our meals for the time being.

I found this recipe online (not sure where), and it sounded so yummy, I just had to try it; and we are glad I did.

One Pan Chicken & Potatoes Meal

I am including a recipe for 7 Spice, too, for those who do not have it in their spice collection - this spice blend is a perfect Fall blend, because it has every spice in it that I used in Fall scented kitchens.

I've cut the original recipe back, so it will be easy for couple enjoyment … or a solo lobo meal, with a spare to slip into the 'freezer.

About an hour before cooking supper, I did a couple do-ahead-preps that made preparation easier & quicker: I put the spuds in the microwave for 3 minutes, then quartered them when they cooled; I peeled and pressed the garlic, and put it aside until cooking time; I blended the oil, lemon juice, and spices - and set them aside until needed.

When 5 PM, rolled around, minimal time was required to pull Supper together … and the little counter-top oven & hot plate I use, literally cuts the baking time in half: we were enjoying our meal in 20 minutes time :-)

About 30 minutes into baking time with a regular oven, place your steamer pot on a stove burner and get the water heated to a rolling boiling (if you are using the type of oven I am, get the water set to boil as soon as you slip the chicken in the oven).

==One Pan Chicken & Potatoes ~serves 2

3 small Chicken Thighs * 4 small potatoes (not the tiny baby spuds), quartered * 2 Tbsp. Olive Oil * 2 Tbsp. Lemon Juice * 3 garlic cloves, pressed * 1/2 tsp. Lebanese Seven Spice (recipe below) * 1/2 tsp. Paprika * 1 tsp Salt (I use a salt substitute) * 1/2 tsp. grnd. Black Pepper * 1/2 Tbsp. Parsley * 8" x 8" square foil baking pan (easier to use when RVing) * Cooking Oil Spray (I used Butter-flavor)

Lebanese Seven Spice Recipe: 1/2 Tbsp. grnd. Allspice * 1 Tbsp. grnd. Coriander * 1/2 Tbsp. grnd. Cinnamon * 3/4 tsp. grnd. Black Pepper * 3/4 tsp. grnd. Cloves * 3/4 tsp. Cumin * 3/4 tsp. Nutmeg

Thoroughly mix all ingredients together - then place in a spice jar.

Lebanese 7 Spice Blend.

1) Preheat oven to 400-degrees. Spray cooking pan.

2) With a paper towel, pat the chicken thighs dry; place in baking pan.

3) Place potato quarters in a medium-size bowl. In a small bowl, combine the liquids, garlic, and spices: blend well with a small whisk - pour over the potatoes, and use your hands to thoroughly coat the potato pieces. Add potatoes to baking pan; drizzling remaining liquid over chicken thighs.

4) Place in oven, and bake uncovered, until juice runs clear when chicken piece is pieced gently with fork tines (a little over an hour using a regular oven … and about 15 minutes using the type of oven shown in this post).

Ready for the oven.

5) Turn off the oven, and allow chicken to rest while you steam the veggies. Carefully remove pan from oven; and place on countertop, on a hot pad.

Steam Veggies: I used broccoli florets, cauliflower florets, and little baby carrot chunks.

Place about 16 ounces of water into a steamer pot; place on stove burner and bring to a rolling boil on high heat. When water has reached the boiling level, add veggies to the steamer basket and set in pan; cover and steam for 6 minutes (do not over steam - carefully check stems for doneness, by sticking lightly with fork tines). When stems are tender, gently remove lid - and basket; carefully remove the veggies and serve immediately.

Fall is arriving, & my left knee aches with weather predicating predictability.

My coffee needs more zing to effectively do it's thing.

I'm more than ready for a change of climate; which will positively alter my lagging enthusiasm … Holland is angling for next week ;-)

CAN I HAVE A WITNESS?

 

It has become common practice today for Christians to present the case for the defense of Yeshua Ha'Mashiach like lawyers in court. Preachers have become lawyers talking to congregations as if to a jury; and Christians have taken that same approach into the highways and byways of everyday life, arguing to get a verdict in favor of Yeshua because that approach looks so right, and plausible, and sensible.

But is it?

That is humanistic show of knowledge; trying to highlight the Gospel with worldly wisdom of words.

Yeshua needs no defending. He is not a prisoner in the dock. His repute does not depend on any plush pew jury. The time has come and gone where Yeshua was dragged to the bar of Rome,  and Pilate judged Him. Today Pilate stands at the bar of history and Yeshua is His judge. WE ARE NOT LAWYERS, WE ARE WITNESSES. Normally a witness only speaks and describes what he has seen. Sometimes however a witness is a piece of evidence. Perhaps a man has been cruelly attacked and injured. He appears in court to display himself, takes off the shirt to show the scars of his injuries - those scars speak for themselves. He himself is a piece of evidence. We believers are not lawyers, attorneys, or barristers in court pleading a defense for Yeshua. We are WITNESSES. Witnesses don't argue, don't plead, and don’t make speeches. They simply speak the truth, declare what they know. Let’s raise our voices like trumpets.

Laugh at me if you wish, but I will live my life as I see fit; follow my own dreams, serve my God, share with those I love, believe that hope and faith are alive in the hearts of most, sing a hymn, pray out loud, enjoy just being alive … and if that makes me an old fool in the eyes of others - at least I am a happy one.

September 29th: Holland wanted to go watch waves this morning … but I had a load of laundry washing, and I didn't want to leave it unattended; so, I encouraged him to go alone: "Go - go listen to your music while you wave watch waves, and relax your mind. I'll finish this laundry up while you're gone; and we'll have chicken for supper when you get back."

While the laundry was spinning, and drying the time away … I finished up the little preemie set I've been working on:

He was gone about an hour and a half, and when he returned, he came bearing gifts with a twinkle in his eyes, and a smile aimed my way; "Look in the bag - I got a surprise for you" :-)

What a guy! He must have searched hard, for these  - they can be hard to find ;-)

We did have chicken for supper - but he changed the variety, saying, "I know you need iron, but I couldn't find any beef liver, so I got the chicken"; and I'm okay with that. Chicken liver is good, too (I like the way Holland cooks it, and it packs nutritional power, too) ;-)

HAPPY HEART~Shavua Tov; Ocean Park-WA



I woke up around 3 AM this morning with a rash on my wrist that had me digging at it with my fingernails … so, off my watch came: it has a metal stud used for closure on the watch band - and I am allergic to metal.

I have to be careful with dairy products; but I have to be especially careful with metal contact on my skin. This can make life very dicey. Eyewear has to fit very precisely on the sides of my face, or skin will come off when I remove them for the evening. I can only wear costume jewelry; some metal in the design is okay, if none of it touches my skin. I cannot wear a wedding ring. I have to be careful with clothing that has metal clasps, zippers, or shank closures - this includes footwear. I have to be careful with soaps, shampoos, makeup, perfumes, and adhesive Band-Aids.

Allergic reaction … metal stud closure: I covered the exposed metal with a piece of electricians tape; Holland suggested this, because the tape matches the band color.

I don't think the wrist rash would have been so bad if my immune system had not already been fighting allergic reactions from dairy products, and the toxicity of fast foods fare - another reason I want to cook our meals (I can be sure of what goes into my mouth that will affect my body); we ate fast food for 3 months straight while waiting for Independence to be repaired - healthy food is hard to use, when living in a motel for an extended period of time with an outdated microwave and a very small 'fridge.


I am still suffering itching episodes from that - that have the backs of my thighs pretty scratched up due to the infuriating itch that won't go away until the allergy abates (I do lather up with cortisone crème, but it's only a temporary fix that doesn't last). I was hoping to wear shorts when we get to Yuma-AZ, because it will be 110-degrees when we get there … but I can't wear short if my thighs look like a rabid dog attacked the back of my legs.

I recently found out that I am allergic now, to my asthma inhaler.

There is no cure for angina.

There is no cure for asthma.

There is no cure for dairy allergies.

There is no cure for metal allergies.

My body is a mess from the word "go" :-(

If I didn't trust Elohim with my Life, I'd be an anxious basket case of 24/7/365 worry: and that's no way to live. From the time I wake up, to the time I lay my head down at night … I have to trust what Yeshua did on Calvary's hill for me: Elohim has a Plan for my Life. In Him, and His Word, will I trust.

And apologize to my new husband for "being a lemon".


I'm always cautioning Holland against over-protecting me: I can't let other people's (doctor's, husbands, kids, grandkids, friend's) fears and worries trip me up.


Poor Holland; I did warn him about these things - but I don't think he realized how severe they all are. My allergic reactions have severely limited his life enjoyments, also … recipes that call for butter, milk, cream, and eggs taste different when made with substitutes; he is eating them, and not gripping - but I know his tongue misses the richness in flavor that is gone, now. His heart gets a major workout every time I have a severe asthma flareup. He worries about a possible heart attack in motion, when an angina episode kicks up a fuss. He would have liked to have slid a wedding ring onto the third digit of my left hand when we exchanged vows. He gets frustrated because he doesn't think I take these things serious enough.

I do; but I refuse to live in fear.

Life is for living … and I intend to l.i.v.e., for as long as Elohim grants me Life.


This year really put him through {the test} in more ways, than one, because I am a walking time bomb, in more ways than one.

Thankfully he's still hanging around, and wanting to make a go of this marriage that has been very challenging from every angle.


Tonight I made a mac and cheese supper using a 4Patriots packaged meal; and I added to it, as usual ;-)

I will use these meals up, because they are here and they cost quite a bit of $$$ - but once they are gone, I will start cooking from scratch; knowing exactly what (and how much of what) is going into my mouth that will affect  my body.

We bought these meals because we had planned on boondocking more than we have been, and this seemed a logical and wise decision given the plans we held then: when they arrived, I had repackaged all the 4Patriots meals we bought last year into servings for a couple, rather a family; breaking down the packages to fit our needs. But the meals are bland and basic ingredients … so, I jazz them up a bit with flavor, color, and immune-building-nutritional additives.

==My JAZZED-UP 4PATRIOTS MAC & CHEESE SUPPER~serves 2 or 3


Half a packaged 4Patriots Mac & Cheese meal * 1-3/4 c. Water * 1-lb ground Beef * 1/2 Red Bell Pepper, diced * 1/4 Red Onion, sliced * 1 tsp. Cajun Seasoning (recipe at end of directions)

1) In a medium-sized cooking pan, brown the ground beef; remove with slotted spoon to a plate lined with paper towels to wick fatty grease.

2) Wipe the cooking pan clean, and add onion and red pepper pieces; cook just enough to soften … but not to mushy stage; remove with slotted spoon to the plate holding the draining beef.

3) To the cooking pan, add the water - and bring to a boil. Stir mac and cheese mixture into boiling water; reduce heat to medium, and cook for 15 minutes - stirring frequently.

4) Add seasoning, beef and veggies to the cheesy sauce, and cook another 5 minutes; remove from heat, and let stand for 2-3 minutes.

Homemade Cajun Seasoning: 2 Tbsp. Paprika * 2 Tbsp. Garlic Powder * 2 Tbsp. dried Oregano leaves * 1 Tbsp. Salt (I used a salt substitute) * 1 Tbsp. Onion Powder * 2 tsp. freshly grnd. Black Pepper * 2 tsp. Cayenne Pepper

Blend well; place in a spice jar.

After Supper, I went online and found a video of the Messianic fellowship I used to attend - I miss this fellowship; but Holland would never consent to going with me, so I haven't been there since November 2023; before we were married. Winter travel is dicey, and Holland flat-out refused to go, in any season.
