My husband likes burritos; so, this afternoon I made up some breakfast egg & bacon burrito's to put in the freezer for quick grabs, and tasty eats to microwave 😊
The way I made my burrito's takes time … but good things usually do; and hearing my husband's praise, was definitely worth it 👌 👩❤️💋👨
I didn't note the clock 🤔 as I worked … but Holland said it took me about 2 hours from start to finish.
VAL'S HUNGRY JACK BREAKFAST BURRITOS Recipe ~makes 8
1 box Hungry Jack Hashbrown Potatoes * 2 c. Hot Water * 5 Shiitake Mushrooms * 1 med. Yellow Sweet Onion * 1/2 Green Bell Pepper * 1 mini Red Sweet Pepper * 1 mini Yellow Sweet Pepper * 10 sliced COOKED Bacon * 1-1/2 c. Cheddar Cheese, grated * 8 large Flour Tortillas * 8 eggs * 1 lrg. Pyrex Measuring Cup with pouring spout * 1 Lrg. Skillet with lid * 1 sm. Skillet * Cooking Spray * 1 med. Mixing Bowl * 2 sm. bowls * 2 Dinner Plates
1) Prepare the dehydrated Hashbrown potatoes as directed on the box; set aside.
2) Cut onion into 3rd's - half those pieces, and slice thinly cross grain; place in the mixing bowl.
Cut mushroom caps in half & slice into julienne strips; place in the mixing bowl.
Cut peppers in half; seed, & slice into julienne strips; place in the mixing bow … stir to blend pretty evenly.
3) Spray large skillet with cooking spray. Put onions, mushrooms, and peppers into into the skillet - cook on low heat until veggies are soft to the bite.
Wipe mixing bowl clean, and set aside.
4) Slice bacon into julienne strips; place in small bowl.
When veggies are soft, add bacon to the skillet, place lid over all and simmer until bacon is heated through: remove from heat and place mushroom, veggie, bacon mixture in the mixing bowl.
5) Wipe skillet clean, and spray with cooking spray. Drain any liquid off Hashbrowns - add to skillet and sprinkle with salt & pepper. Cook for 7 minutes, turning frequently to keep from burning.
When Hashbrowns are done to satisfaction, remove from skillet onto a dinner plate - set aside.
6) Break 1 egg onto a small bowl & whisk until frothy.
Spray small skillet with cooking spray and add whisked egg - cook over low heat until set … then carefully lift and flip over to cook other side.
Sprinkle half the set egg facing, with some cheese; turn half the set egg over to envelop the cheese and cook a few seconds; then flip and cook a few seconds more.
7) Place 1 tortilla on the countertop; place a little under 1/4 cup of the Hashbrowns on the tortilla, and top with: cheese omelet, mushroom-veggie-bacon mixture … roll tortilla to make a burrito.
8) Repeat the burrito process with EACH of the remaining eggs to make 7 more individual cheese omelets - enfolding in 7 more tortilla's … following the Hashbrown, omelet, mushroom-veggie-bacon mixture layering.
