Val's Holiday Turkey Pie; Coalinga-CA

I made a meat & vegetable pie for supper tonight 👨‍🍳🥧, using some of the November turkey meat 🦃 we had precooked & frozen.

Cold weather 🧦👕 calls for hearty meals … and we like our heartiness, casserole style 😉

Being that this is the month of winter festivities, I added a few more ingredients to my otherwise simple meat pie - like cranberries, which is a colorful seasonal food item; and mushrooms & celery for color and additional health benefits ⚕️

This recipe is delicious; the pastry dough is wonderfully flaky, and my husband says, "It tastes just like chicken pot pie!"

Val's Holiday Turkey Pie ~ 6 servings

Two-Crust Cheese Pastry (recipe following) * 2 Tablespoons Butter or margarine * 2 Tablespoons Flour * 1 teaspoon Himalayan Pink Salt * 1/8 teaspoon ground Black Pepper * pinch of Thyme leaves * pinch of Rosemary leaves * ½ cup Turkey Broth * ½ cup light Cream * 2 cups Turkey meat, cooked & cubed * 1 c. Cranberries, whole * 1 Yellow Onion, diced * 1 large Russet Potato, diced * 2 med. Carrots, sliced into thin coins * 1 large stalk Celery, sliced thin * 1 lrg. Portobello Mushroom, quartered & sliced * 1 cup Peas * 1 Med. Soup Pot * 1 Lrg. Cooking Spoon, slotted * Measuring Cups & Spoons * 1 Med. Mixing Bowl * 9" x 13" oblong glass Pyrex Baking Dish

Ingredients.
Prepare veggies and mix to incorporate.

1) Prepare Filling: Blend broth, cream, flour, salt, pepper, thyme & rosemary:

In a lrg. measuring cup, blend liquids & spices.

2) In pot, melt butter over low heat; add broth mixture & cook over low heat, stirring until mixture is smooth and bubbly: gently boil 1 minute.

At this point, add the cranberries, to soften slightly.


Low heat; melt butter.
Blended flour, broth, milk, and spices added to melted butter.
Whisk & continue cooking 1 minute; add cranberries & stir to blend.
Cranberries added to soften.

3) Remove from heat - stir in vegetables & turkey meat:

Colorful meat, veggie & fruit medley.

4) Pour mixture into the oblong glass Pyrex Baking Dish.

Filling ready to be topped with cheese pie crust.

Heat oven to 425-degrees.

5) Prepare pie crust: Two-Crust Cheese Pastry: 2 cups Flour * 1 teaspoon Sea Salt * 2/3 cup + 2 Tablespoons Shortening (I used Butter Flavored) * 4 Tablespoons Water * 1 cup shredded Cheddar Cheese * Dinner Fork for blending ingredients

Mix flour & salt. Cut in shortening thoroughly; add cheese and blend:

Cheese added to pie topping.

Sprinkle water gradually over mixture, a tablespoon at a time – tossing lightly with a fork after each addition. (If dough appears dry, a few drops of water may be added). Gather dough into a ball.

6) On a lightly floured surface, roll out dough into an oblong piece to fit casserole dish; carefully lift by gently rolling it up with rolling pin & gently unrolling across filling. Trim edges to slightly overlap baking the dish edges; turn edge crust under to fit just inside Pyrex dish:

Pie Crust Topping sealed, & vents opened to allow for steam release.

Bake 35 to 40 minutes, or until nicely browned.

7) Remove from oven, let stand about 5 minutes … serve & enjoy!

Done; & so YUM!
