There's a bit of a chill in the air today: it seemed a good day for steak and potatoes … gravied steak with plenty of gravy for mashed potatoes.
This meat dish takes about 30 minutes to prepare, & 2 hours to cook - but, it is worth every minute.

This smothered chuck steak is a comforting dish with a flavorful gravy. We like to eat our gravied meals out of glass pie plates; it suits our on-the-road lifestyle … and all of that gravied goodness stays put until we lift it to our waiting taste buds.
Delicious Smothered Chuck Steak and Gravy Recipe ~serves 2
1 pounds chuck steak * 1/2 c Flour, all-purpose flour * 1 TBSP Vegetable Oil * 1 Yellow Onion, sliced * 2 Garlic cloves, pressed * 2 c Beef Broth * 1/2 TBSP Worcestershire Sauce * 1/2 tsp. Salt * 1/4 tsp. Black Pepper, grnd * 1/2 tsp Thyme, dried * 1 sm. Bay Leaf * 1/2 TBSP Fresh Parsley, cut
1 Lrg. Skillet * 1 Chopping Block * 1 Lrg. Kitchen Knife * Kitchen Tongs * 1 Gallon-size Ziploc (for flour coating) * 1 Garlic Press * 1 Lrg. Pyrex Measuring Cup * Measuring Cups & Spoons * Lrg. Cooking Spoons * Supper Plates & Silverware
1) Season the chuck steak with salt and pepper, then coat it with flour in the Ziploc, shaking off the excess.
2) In a large skillet, heat the vegetable oil over medium-high heat. Add the flour-coated steak and sear until browned on both sides. Remove the steak and set aside.
3) In the same skillet, add the sliced onion and garlic. Sauté until the onion is softened.
4) To the skillet - gradually add the beef broth, Worcestershire sauce, thyme, bay leaf & parsley; scraping the bottom to deglaze. Bring to a simmer.
5) Return the steak to the skillet: cover, and simmer on low heat for 1-1/2 to 2 hours, or until the meat is tender.
6) Remove the bay leaf. Serve the steak with gravy over mashed potatoes or rice.
